We love Fideo noodles with an easy and delicious tomato sauce for a simple family dinner. Serve this pasta recipe with a healthy tossed salad and side of sautéed spinach with chic peas.

Fideo – Delicious Pasta Recipe using Cut Spaghetti

Fideo, or Fideo Cut Spaghetti is one of our favorite pastas to cook with.  A light angle hair pasta the has been cut into very small pieces.  Thin noodles that are used in a Spanish dish called Fideua. Fideo means “noodle” in Spanish, and the noodle can be cut either short or long.

We always have a box of these noodles in the pantry to toss in soups and also to cook up quick side dishes that are delicious.

This Fideo noodle pasta recipe is thin noodles that are toasted lightly in oil and butter and then simmered in tomato sauce. It’s simple to prepare and one of our favorite comfort foods!

What Ingredients you will Need to Make Delicious Fideo Pasta

  • Fideo Cut Spaghetti
  • Olive Oil
  • Butter
  • Onion
  • Garlic
  • Dried Cumin
  • Tomato Sauce
  • Soup Base
  • Optional Cheese for Serving: Crumbled Queso Fresco –  Cotija Cheese or Shredded Mozzarella

Ingredients
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion chopped fine
  • 2 cloves garlic chopped fine
  • 2 teaspoons dried cumin
  • 2 cups Barilla Fideo Cut Spaghetti
  • 1 (15 oz.) can tomato sauce
  • 1 teaspoon soup base
  • salt & pepper
Instructions
  1. Using a medium skillet, saute onion and garlic in butter and oil until onion is tender.
  2. Add Fideo pasta to the skillet with the onions and garlic and cook for about 2 minutes.
  3. Stir the noodles with a spatula while browning. Do not let them burn.
  4. Sprinkle noodles with cumin, salt and pepper while cooking.
  5. Pour the tomato sauce in the skillet and add one full can of water.
  6. Stir in the soup base and continue stirring until everything is well blended.
  7. Let simmer on the stove gently for about 6-8 minutes, stirring often.

Fideo - Cooked in butter and oil

Using your spatula, push the noodles around the skillet until well toasted. Our favorite part of this recipe is the lightly toasted and seasoned noodles. Toasting noodles brings out a delicious nutty flavor.

 

Fideo - Add the tomato sauce and broth

Stir in the tomato sauce and one full can of water. You can add additional water if necessary. You can also substitute chicken broth for the water instead of the soup base.

What is Fideo Cut Spaghetti?

Fideo is very similar to regular spaghetti but is much shorter in length, typically about an inch or less. It’s often toasted in oil before being cooked in broth or sauce, giving it a slightly nutty flavor and helping it maintain its shape and texture in soups or other dishes.

Barilla sells Fideo Cut Spaghetti. If you can’t find this type of spaghetti in your grocery store – break up angel hair or vermicelli pasta into small pieces. Either will work just fine for this recipe.

What Else Can I add to This Awesome Pasta Dish?

  • If you love meat with your pasta – sauté your favorite sausage and add to the pasta. Buy 1/2 lb. fresh sausage links and remove the out casings. Brown sausage in a small amount of olive oil.
  • Chic peas also make a delicious and healthy addition.

What is Vermicelli Fideo?  Is It a Fideo Pasta Substitute?

Vermicelli Fideo pasta is just the Vermicelli cut into thirds to make smaller cuts of pasta. If you can’t find the Fideo pasta noodle is your store, then just make your own using Vermicelli pasta.
